Grilled Poblano Pepper and
Spread 8 tortillas with 2 tablespoons cream cheese or goat cheese each. Sprinkle 1 diced mango and 1 minced poblano pepper over cheese, and press another tortilla on top.
Brush butter over the outside of each quesadilla, top and bottom. Grill quesadillas on medium, about 3 minutes each side, until brown.
Slice into wedges and serve with an optional sour cream topping and delicious with black bean soup.
